  • Frittata w/stinging nettles, asparagus, and fingerling potatoes
  • Spelt pasta w/ ramps, mushrooms and aged goat cheese
  • Roasted parsnips w/horseradish-herb butter sprinkled with hemp seeds (adopted from Simply Recipes)
  • Bulgur w/ roasted sweet potato bits and grilled haloumi cheese
  • Blanched green bean salad w/toasted almonds and pickled red onion
  • Raw Tuscan kale salad w/pecorino dressing and roasted spicy chickpeas
  • Raw broccoli slaw
  • Swiss chard and bitter greens braised with cumin and cilantro
